They say "there are more than one ways to skin a cat". Well, whoever came up with that expression clearly hasn't tried to list all of the ways in which one can boil water!
In this modern era, it's easy and convenient to buy one's water pre-boiled. However, like many out-of-the-box (bottle?) solutions, possessing the knowledge of how to produce the product oneself empowers the individual to customize the results to best fit their needs. To put it another way, exercising well-informed control over a recipe's most basic elements creates a flexible foundation that can enhance whatever structure is build upon it. 

First off, what is boiled water?

Secondly, why bother boiling water?
Safety- boiling water kills off a good amount of pathogens.
Cleaning- get those hard-to-clean bits out of your pots/pans.
Even within the broad category of "food preparation", boiling water accomplishes many things.
